  • ½ cup granulated sugar
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 ½ cups pure pumpkin puree (not pie filling)
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract (for filling)
  • ½ tsp ground cinnamon (optional, for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In another bowl, mix brown sugar, granulated sugar, and oil until smooth.
  4. Add eggs, pumpkin puree, and vanilla to the wet mixture and blend well.
  5. Gradually add the dry ingredients to the wet, mixing until just combined.
  6. Use a cookie scoop to drop batter onto baking sheets, leaving space between.
  7. Bake for 10–12 minutes, or until cookies spring back when touched.
  8. Let cool completely on a wire rack.
  9. To make the filling, beat cream cheese and butter until smooth and fluffy.
  10. Add powdered sugar gradually, followed by vanilla and optional cinnamon.
  11. Spread or pipe filling on the flat side of half the cookies, then top with remaining cookies to form sandwiches.
  12. Chill assembled pies for 20–30 minutes before serving for best texture.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Chill the filling slightly before assembling for clean sandwiches. Store in fridge up to 5 days or freeze for longer shelf life.
