For the Cakes:

  • 1 2/3 cups all-purpose flour

  • 3/4 cup unsweetened cocoa powder

  • 1 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup unsalted butter (softened)

  • 1 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup buttermilk

For the Filling:

  • 1 cup evaporated milk

  • 1 cup granulated sugar

  • 3 large egg yolks

  • 1/2 cup unsalted butter (softened)

  • 1 1/3 cups sweetened shredded coconut

  • 1 cup chopped pecans

  • 1 tsp vanilla extract

Instructions

  • Preheat and Prep: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • Mix Dry Ingredients: In a bowl, sift together flour, cocoa powder, baking soda, and salt.

  • Cream Wet Ingredients: In another bowl, cream butter and sugar until light. Beat in egg and vanilla.

  • Combine: Alternately mix in the dry ingredients and buttermilk, starting and ending with dry. Do not overmix.

  • Scoop and Bake: Drop tablespoons of batter onto prepared sheets. Bake for 10–12 minutes. Let cool on racks.

  • Make Filling: In a saucepan over medium heat, stir evaporated milk, sugar, and yolks until thickened. Remove from heat, then mix in butter, coconut, pecans, and vanilla.

  • Assemble: Spread filling on the flat side of half the cakes. Top with remaining halves to form sandwiches.

Notes

  • Ensure filling is completely cooled before assembling.

  • You can substitute walnuts for pecans if desired.
