A soft, cake-like cookie filled with gooey coconut-pecan frosting, these German chocolate whoopie pies bring together the best of two iconic desserts.
1 2/3 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter (softened)
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup buttermilk
1 cup evaporated milk
1 cup granulated sugar
3 large egg yolks
1/2 cup unsalted butter (softened)
1 1/3 cups sweetened shredded coconut
1 cup chopped pecans
1 tsp vanilla extract
Preheat and Prep: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Mix Dry Ingredients: In a bowl, sift together flour, cocoa powder, baking soda, and salt.
Cream Wet Ingredients: In another bowl, cream butter and sugar until light. Beat in egg and vanilla.
Combine: Alternately mix in the dry ingredients and buttermilk, starting and ending with dry. Do not overmix.
Scoop and Bake: Drop tablespoons of batter onto prepared sheets. Bake for 10–12 minutes. Let cool on racks.
Make Filling: In a saucepan over medium heat, stir evaporated milk, sugar, and yolks until thickened. Remove from heat, then mix in butter, coconut, pecans, and vanilla.
Assemble: Spread filling on the flat side of half the cakes. Top with remaining halves to form sandwiches.
Ensure filling is completely cooled before assembling.
You can substitute walnuts for pecans if desired.
