Ingredients

  • 1/2 cup fresh lemon juice

Instructions

  1. Peel and chop the cucumber, then blend with 1 cup of cold water until smooth. Strain to remove pulp if desired.
  2. Juice fresh lemons and set aside.
  3. Gently crush mint leaves to release essential oils.
  4. In a pitcher, combine cucumber juice, lemon juice, mint, sweetener, and remaining water. Stir well.
  5. Chill for at least 30 minutes before serving.
